I started cooking at a very young age and this homemade waffle recipe is one of my earliest memories of making it myself, for my family. They were a staple of my childhood and truly are the best Belgian waffle recipe for light and fluffy waffles.

Belgian waffles are thicker and generally larger than regular waffles because they are made with a waffle maker with deeper grids. These deep pockets are perfect for holding delicious puddles of syrup.

Sweet Milk Waffles

Belgian waffle batter usually contains a leavening agent. Our secret ingredient for waffles that are crispy on the outside but light and fluffy in the center is to incorporate beaten egg whites into the batter.

Whip the egg whites: Separate the egg whites and yolks into two separate bowls. (Be careful not to get any yellow yolks with the whites or they won’t whip until firm). Use an electric mixer to beat the egg whites until stiff peaks form.

Make the dough: Add the milk and oil to the bowl with the egg yolks and mix well. Add the dry ingredients and mix well.

Serving: Top these crispy Belgian waffles with my delicious homemade sauce, powdered sugar and any kind of fruit, like bananas or berries. You can even skip the syrup and add Nutella, jam or peanut butter instead.
