*It is very important to cook the garlic over a low heat to prevent burning and to infuse the oil with the flavor of the garlic and chili pepper.
*You can also drain the pasta and add it to the garlic oil instead of straight from the pot. Just remember to reserve a quarter cup of the pasta water and add a little at a time while mixing the pasta. You don’t want to add too much, just enough to emulsify the garlic-infused oil to a smooth, non-greasy finish.
