How long you can marinate chicken in buttermilk is 30 minutes to 24 hours. If you don’t have much time, you can do a quick 30 minutes, but if you are not in a hurry, let it marinate for at least 4 hours.
Put it in the fridge to marinate and when it’s ready to cook, take it out of the fridge and let it come to room temperature before cooking.
To cook marinated buttermilk chicken on the grill – Remove the chicken from the buttermilk. Place on the grill over medium heat, cover with olives and cook on each side until cooked through.
In the oven – Remove the chicken from the marinade and place it on a baking sheet with baking paper. Set the oven to 400F / 200C and cook buttermilk marinated chicken for 25-30 minutes or until cooked.

This is done so that the chicken can be tenderized and filled with flavor and when it is cooked, it is juicy and tender.
