How to prepare bak but from scratch (no need to use prepackaged spices) just like what you find in Malaysia or Singapore.
Resep Ba Ku Teh
Bak kut teh is a Chinese pork ribs soup cooked with many Chinese herbs, usually served with steamed white rice, you tiao (Chinese turnips) and thinly sliced chilies and minced garlic with soy sauce. It’s been a long time since I had bak kut teh, and I miss it so much.

I spent almost two years in Malaysia and it was one of my many favorite Malaysian foods. I always had this from the night market with my friends and it was really good, I think it must be a combination of good food and good company 🙂
Fast forward a few years later when I was in the US I found a bak kut recipe from a Malaysian/Singaporean/Indonesian cookbook and I made it with great success.
That book was such a little treasure to me as it has many of my favorite recipes and being such a newbie in the kitchen at this time it has been so helpful. Unfortunately, I no longer have the book with me, so it’s been a frantic search for a reliable bakkut recipe again.
I think this recipe is very close to the one I had in Malaysia, or maybe I miss this dish so much, haha. Anyway, if you love bak kut teh and want to collect the spices from scratch (don’t use expensive prepackaged bak kut theh spices), this might be a good reference. ♥ I wanted to cook this ever since my daughter used to order vegetarian bak kut teh at organic eateries. It smelled wonderful and we could drink the wonderfully fragrant soup without feeling guilty about the fat content. However, it was months later before I came across Amy Beh’s recipe which renewed my interest in cooking this dish.

There were mixed reactions when I brought this up. My youngest son loves to eat real bak kut teh. He recognized the aroma of the bakkut seasoning as it was roasting in the pot and the aroma had permeated the air in my house! I guessed he was wondering about a favorite meat record. Boy!, he was disappointed to discover that there was no meat in the whole pot!
Final verdict? All the men in the family preferred the real thing. Only the ladies accepted this vegetarian version with grace!
1. Bring 1.5 liters of water to a boil. Add one small packet of bakkut of spices, garlic cloves, star anise, cinnamon bark and crushed white peppercorns.
3. When it comes back to the boil, add the tofu pieces, mushrooms, black mushrooms and the bean flour sticks.

4. Allow this to simmer for 15 minutes. Add inoki mushrooms and continue to boil for another 5 minutes. You can eat the food — the restaurant and the cafe, it’s good to eat and cook.
