Today I’m sharing with you another classic homemade soup recipe that we love, Cream of Mushroom Soup. This naturally vegetarian dish is hearty, rich and full of deep umami flavor. It’s great with fresh herbs and served as a side or main dish!

My Creamy Mushroom Soup is also a one pot recipe. Button mushrooms are sautéed with onion and garlic, then combined with flour and butter to make a thick roux. In the same pot, pour vegetable stock (or water!) and add milk and cream for a perfect creamy texture.

The soup is ready in just 30 minutes, including prep time. Try this healthy, delicious, quick and easy dinner recipe as part of your weekly meal plan!

2. Rinse or wipe dry 200 to 250 grams (about 1 cup) of white button or cremini mushrooms. Slice from the bottom of the base stem of each mushroom. Then cut them in half or quarters or thinly slice them.

3. Next, heat a heavy pot or pan over low-medium-low heat. Melt 2 tablespoons of butter (salted or unsalted) in the pan.

12. Continue sautéing until all the water in the pan dries up. Then add 1 tablespoon of whole wheat or all-purpose flour.

As the soup cooks it will thicken more and more. Stir regularly to prevent it from sticking to the bottom of the pan.

22. Next, add 6 tablespoons of light cream or cooking cream or low-fat cream (about 25% to 30% fat) or 3 tablespoons of heavy cream or whipping cream. You can also add 7 to 8 tablespoons of half and half.

24. Add 1 tablespoon of chopped parsley or cilantro (coriander) leaves or any fresh herbs of your choice.

26. Finally, sprinkle 1 to 2 pinches of ground nutmeg powder or grated nutmeg and mix. Nutmeg gives a nice pleasant aroma but can be omitted if you don’t have it.

27. Turn off the heat and pour the mushroom soup into individual serving bowls. Serve the cream of mushroom soup steaming hot garnished with more freshly chopped parsley or coriander leaves.

As it is, this recipe is not gluten free. I use whole wheat flour to make a thicker roux for the creamiest mushroom soup. If you want to make a gluten-free version, just replace the whole wheat flour with your preferred GF-friendly mix. Potato starch, tapioca starch, and corn starch are all great alternatives.

You can replace the dairy butter used to make the roux with your favorite plant-based butter alternative. Use a non-dairy plant-based milk – such as cashew milk or soy milk – instead of dairy milk and cream. You can also include cashew cream, for a rich and thick vegan mushroom soup.

Homemade mushroom soup will stay good for up to 1 to 2 days in the refrigerator. Transfer cooled leftovers to an airtight container and store in the refrigerator. The soup will thicken more after it cools. So, to thin the consistency, add some water or vegetable stock while reheating. Reheat in the microwave or in a saucepan.
