Mascarpone – Mascarpone (/ˌ mæs kɑːr ˈpoʊ neɪ, -n i / , US also /ˌm ɑːs k -/ , Italian: [maskarˈpoːne]) is a soft Italian acid-set cream cheese.
After the cream has expired, the whey is removed without pressing or aging. Mascarpone can also be made using cream and tartaric acid left over from the bottom or sides of barrel wine.

The traditional method is to use three tablespoons of lemon juice per pint of warm heavy cream. Allow the cream to cool to room temperature, pour it into a cheesecloth-colander, set it in a shallow dish or dish, refrigerate for one to two days and strain.

Mascarpone originated in the Italian region of Lombardy between Lodi and Abiadegrasso south of Milan in the late 16th or early 17th century. I love egg mascarpone cream, and you have to make sure you have fresh, safe eggs. This can’t always be guaranteed, so egg-free mascarpone cream is a good option.

Another tip is to make sure the mascarpone cheese is very cold. Many recipes that use mascarpone don’t say this. I find that every time the warm mascarpone spills and curdles.

Soft peaks are when the cream is thick enough to hold the peaks that fail immediately upon lifting the whisk.
Firm peaks form when the cream thickens enough to hold straight peaks when you lift the whisk.
This cream is best served within hours of preparation. It will keep for up to two days in the refrigerator, but it won’t be light. Mascarpone cream is not suitable for freezing.
