Hollandaise sauce: Bring water to a boil in a saucepan, then reduce heat. Place a glass/stainless dish on top (double boiler method), add the egg yolks, mix with a whisk to thicken, then remove from the heat.
Gradually add the melted butter while continuing to mix until an emulsion forms. Add salt and pepper to taste, mix well. Cover the container to keep warm, set aside.
Poached egg: Boil water in a 4-7 cm saucepan until it boils, then lower the heat so that the water just boils slightly. Add 1 teaspoon of vinegar, then stir in a circular motion to create a swirl. This helps the egg whites stick together and not spread.
Add the eggs, cook for about 2-3 minutes, depending on the level of doneness. Remove the poached eggs with a slotted spoon, set aside.

Take an English muffin or any bread, cut it in half, spread butter on both sides. Heat a non-stick pan, cook the bread until golden brown, remove from heat.
To finish: Place the English muffins, place the smoked beef, then the poached egg, then add the hollandaise sauce. Sprinkle with chopped parsley and chili powder and serve.
