A pair of dyed-in-the-wool cooks are preparing to open a new restaurant in the Grand Cities Mall.
Chefs Ryan Storey and Colin Beaumier, both Grand Forks natives, are planning a soft opening of Mo’s Café by mid-April at the site of the former Del’s Cafe, which closed in early 2018. The space has been completely renovated and remodeled . down to the new flooring, new fixtures and open roof. Mo’s Café will be a breakfast and lunch restaurant, and the owners will be catering in the evenings, either on site or at another location. Story and Beaumier said they’re looking to create a space that’s conducive to family dining while offering quality, made-from-scratch dishes.
“I have kids, (Beaumier) has kids, so we all know we’re only going to eat where the kids eat, so we have to make sure we have all of that,” Story told the Herald. “We want it to be family friendly.”
The menu will revolve around build-your-own breakfasts and will include familiar favorites such as chicken-fried steak, steak and eggs and biscuits and gravy. But the idea is to have customers get breakfast or lunch the way they want it, creating their own order. Restaurants will be able to customize their orders by going to the menu and choosing from eggs, meats, potatoes and vegetables and more, and have them cooked to order.

Both Storey and Beaumier have long culinary histories in Grand Forks. They met in the 1990s while working at the Red River Cafe, downtown off DeMers Avenue. Story has worked as a corporate trainer for several restaurants in the city, including the Green Mill. Beaumier has worked in restaurants in Grand Forks, Fargo and hotels in Chicago. Coming together to open a restaurant for them was easy, as was deciding on the name.
Story and Beaumier are both graduates of the Culinary Institute of America, in Hyde Park, New York. In addition to working in the restaurant, they look forward to developing these skills in catering events. Guests will be able to book the restaurant for private events or have food served outside of the property. Beaumier said they will work with customers to create a customized catering menu that stays within their budget.
